Quick answer
- Thanksgiving 2026 is Thursday, November 26.
- 3–5 weeks out (now through Thu Nov 5): settle the headcount, menu, and who's bringing what. our rule of thumb

- Final week: send potluck assignments Thu Nov 19, shop Mon Nov 23, make ahead Tue–Wed. our rule of thumb
- Done: 165°F in the thickest part of the breast and the innermost thigh and wing. USDA
The countdown
Items marked USDA come from USDA FSIS (sources below). Everything else is GravyBoat's own planning advice, the same schedule our planner uses.
Now through Thu, Nov 5 (3–5 weeks out)
- Pick your headcount and dinner time, and ask guests about vegetarian, vegan, gluten-free, and allergy needs.
- Draft the menu and decide what the host makes (main dish and gravy) versus what guests bring. Our potluck guide has a who-brings-what list with amounts.
- Decide on turkey size (USDA: about 1 lb per person; we plan 1¼ lb for leftovers) and whether you'll buy frozen or fresh. Over about 24 lb total, plan two smaller birds. See the turkey guide.
- Check your gear: roasting pan with a rack, a food thermometer, enough serving dishes and serving spoons.
Thu, Nov 12 (2 weeks out)
- Buy a frozen turkey now if you haven't. USDA says frozen is the choice when you're shopping weeks ahead; keep it frozen until it's time to thaw. USDA
- Plan fridge space: the thawing bird needs a shelf, on a tray or in a pan to catch juices. USDA
- Pick up shelf-stable items: stock, canned pumpkin, flour or cornstarch, spices, crackers, drinks.
Thu, Nov 19 (1 week out)
- Confirm the headcount and send potluck assignments, with a note asking each guest to label vegan, vegetarian, and gluten-free dishes.
- Write a day-of oven schedule (use the calculator below) and figure out what can share the oven.
Fri, Nov 20 to Mon, Nov 23: start thawing
| Turkey weight | Fridge thaw time USDA | Move to fridge by |
|---|---|---|
| 20–24 lb | 5–6 days | Fri, Nov 20 |
| 16–20 lb | 4–5 days | Sat, Nov 21 |
| 12–16 lb | 3–4 days | Sun, Nov 22 |
| 4–12 lb | 1–3 days | Mon, Nov 23 |
"Move by" dates are our arithmetic using the long end of each USDA range. Keep the bird in its original wrapper on a tray. A thawed turkey can stay in the fridge 1–2 days. Never thaw on the counter. USDA
Mon, Nov 23 (3 days out)
- Main grocery run: produce, dairy (or plant-based milk), bakery.
- Make cranberry sauce; it holds well for a few days in the fridge.
Tue, Nov 24 (2 days out)
- Buying fresh? Pick it up today or tomorrow, and don't buy a fresh pre-stuffed turkey. USDA
- Bake pies or other desserts. Cube and dry bread for stuffing (or bake the cornbread for gluten-free stuffing). Chop onions and celery.
Wed, Nov 25 (1 day out)
- Check that the turkey is thawing. Still icy? USDA's cold-water method takes about 30 minutes per pound: keep it wrapped in a leakproof bag, submerge it in cold tap water, change the water every 30 minutes, and cook it right after it thaws. USDA
- Prep vegetables, assemble casseroles, set the table, chill drinks, and clear fridge space for leftovers.
Thu, Nov 26: Thanksgiving Day
- Take out the giblets and cook them separately. Don't rinse the raw turkey; USDA research found washing raw poultry raises the risk of spreading bacteria around the kitchen. USDA
- Roast at 325°F or higher. USDA recommends cooking stuffing in a separate dish; if you stuff the bird, the center of the stuffing must reach 165°F too. USDA
- Check 165°F in the thickest part of the breast and the innermost thigh and wing, then let it stand 20 minutes before carving. USDA
- Food questions mid-cook? The USDA Meat and Poultry Hotline is 1-888-674-6854 (1-888-MPHotline). In 2025 it was open on Thanksgiving Day from 8 a.m. to 2 p.m. Eastern; check fsis.usda.gov for 2026 hours.
- Refrigerate leftovers within 2 hours of serving (1 hour above 90°F), in shallow covered containers. USDA
Sun, Nov 29 to Mon, Nov 30: leftover deadline
- Use refrigerated turkey, stuffing, and gravy within 3–4 days, or freeze them (best quality within 2–6 months). Reheat to 165°F. USDA
What time does the turkey go in?
Uses the top of the USDA FSIS unstuffed range at 325°F, plus our own 45-minute buffer for the 20-minute rest, gravy, and last sides. Start checking the temperature early; it's done at 165°F, not when the clock says so.
