How to carve a turkey, step by step

Rest, remove the legs, slice the breast, and get leftovers in the fridge on time.

Quick answer

What you need

8 steps (our method)

  1. Remove stuffing first if you stuffed the bird. USDA says to take all stuffing out of the cavity.
  2. Remove the legs. Pull a leg away from the body, cut through the skin, and press down until the thigh joint pops. Cut through the joint.
  3. Split drumstick and thigh. Find the joint between them by wiggling, and cut straight through.
  4. Slice the thigh meat off the bone, parallel to the bone.
  5. Remove the wings at the joint where they meet the body.
  6. Take off each breast half. Cut down along one side of the breastbone, then keep the knife against the ribs and peel the whole breast off in one piece.
  7. Slice the breast crosswise into 陆-inch slices. That way every slice gets some skin and the slices are short-grained and tender.
  8. Arrange dark meat on one side and white meat on the other, with drumsticks and wings for anyone who wants them. Save the carcass for stock.

The carving technique is GravyBoat's own method. Resting, doneness and storage rules are from USDA.

Our take: carve in the kitchen, not at the table

Carving at the table looks great but is slow and messy, and the meat cools while everyone waits. We suggest showing off the whole bird, then carving it in the kitchen while the gravy finishes. Carving only half and leaving the rest on the bone doesn't help with storage either. USDA says to cut turkey into smaller pieces for the fridge: slice the breast meat, and you can leave legs and wings whole.

FAQ

How long should a turkey rest before carving?

USDA FSIS recommends letting a turkey stand for 20 minutes before carving, for quality, so the juices set and it carves more easily.

How do I know the turkey is done before I carve?

USDA says a whole turkey is safe at a minimum internal temperature of 165掳F, checked with a food thermometer in the innermost part of the thigh and wing and the thickest part of the breast, even if it has a pop-up indicator.

Should I slice the breast on or off the bone?

Our method: take each breast half off the bone in one piece, then slice it crosswise on the cutting board. Slices come out even, each one gets skin, and the meat is easy to store.

How long can carved turkey sit out?

USDA says to refrigerate within 2 hours, or 1 hour if it's above 90掳F, and to discard turkey, stuffing, and gravy left out longer.
