Quick answer
- Turkey math (USDA): 1 lb per person, so 2–6 people need about 2–6 lb of whole turkey. The smallest whole birds are usually bigger than that, so a bone-in turkey breast is often the better fit.
- Breast roasting time (USDA, 325°F, unstuffed): a 4 to 8 lb breast takes about 1½ to 3¼ hours. Always confirm 165°F in the thickest part with a food thermometer.
- Thawing (USDA): allow about 24 hours in the fridge for every 4 to 5 lb. A 4 to 12 lb turkey takes 1 to 3 days.
- Menu (our take): one main, three sides, gravy, and one dessert.
Pick your main
| Option | Good for | Our notes |
|---|---|---|
| Bone-in turkey breast | 2–6 | Classic look, all white meat, fits a small pan. USDA times above. |
| Small whole turkey | 4–6 + leftovers | You get dark meat and drippings for gravy. Use the times on our turkey guide. |
| Turkey legs or thighs | 2–4 | Dark-meat fans. Cook to 165°F like any poultry. |
| Stuffed acorn squash | Vegetarian / vegan | About one squash per two people (our rule of thumb). See our swap guide. |
USDA says to cook all poultry to 165°F measured with a food thermometer.
Scaled-down menu for 4 (our plan)
- Turkey breast with pan gravy
- Mashed potatoes (about 2 lb raw potatoes)
- Stuffing baked in a loaf pan or 8×8 dish
- One green vegetable (roasted green beans or Brussels sprouts)
- Cranberry sauce (one 12 oz bag of berries makes plenty, with leftovers)
- A pie, or mini pies or a crisp in a small dish
Our take: the hardest part of a small Thanksgiving isn't cooking. It's grocery pack sizes. Celery, herbs, and cranberries come in bundles sized for a crowd, so plan two dishes that share ingredients (celery and sage in stuffing and gravy, cranberries in sauce and salad).
Timeline for a breast dinner at 4 PM
- Mon or Tue: move a frozen breast to the fridge (USDA: ~24 hours per 4–5 lb).
- Wed: make cranberry sauce and pie; chop vegetables (see make-ahead sides).
- Thu ~11:45 AM: oven to 325°F. Breast in around noon, so it can take up to 3¼ hours and still rest about 20 minutes (USDA's rest time, for quality) before 4 PM.
- While it rests: bake the stuffing, reheat sides, make gravy.
Dinner timing is our own planning example. Smaller breasts finish sooner, so start checking the temperature early.

FAQ
What size turkey do I need for 4 people?
USDA FSIS recommends 1 pound of turkey per person, so about 4 pounds for four people. Many hosts choose a bone-in turkey breast at that size, or a larger bird if they want leftovers.
How long does it take to roast a turkey breast?
USDA's timetable for a 4 to 8 pound turkey breast at 325°F, unstuffed, is about 1½ to 3¼ hours. Check that the thickest part reaches 165°F with a food thermometer.
How long does a small turkey take to thaw?
USDA says to allow about 24 hours in the refrigerator for every 4 to 5 pounds; a 4 to 12 pound turkey takes 1 to 3 days.
Is it worth doing Thanksgiving for 2?
Our take: yes, with a shorter menu. One main, two or three sides, and a dessert you both love, plus planned leftovers, takes far less time than a full spread.
